Instructions
 

  • Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, carrots, and celery. Cook for about 5–6 minutes, stirring occasionally, until softened.
  • Season and Simmer: Add dried thyme, salt, and black pepper. Pour in the broth and bring to a boil.
  • Add Pasta and Chicken: Stir in the pasta and cook for 8–10 minutes until just tender. Add cooked chicken if using.
  • Finish with Greens: Stir in spinach or kale and cook for 1–2 minutes until wilted.
  • Add Lemon and Serve: Squeeze in lemon juice if desired. Taste and adjust seasoning. Serve hot, garnished with fresh parsley.
