Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract
  • Butter or oil for greasing the pan
  • Optional toppings: syrup fruit, chocolate chips, whipped cream

Instructions

  • Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • Combine wet ingredients: In a separate bowl, beat the egg, then add milk, melted butter, and vanilla extract. Mix well.
  • Combine and stir: Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  • Preheat and grease the pan: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  • Shape the Mickey pancakes:
  • Pour one large circle (about 3 tablespoons of batter) for the face.
  • Add two smaller circles (about 1 tablespoon each) touching the top of the larger one for the ears.
  • Use a squeeze bottle or ladle for more control if needed.
  • Cook and flip: Cook until bubbles form and the edges begin to set, then gently flip and cook the other side until golden brown.
  • Serve and decorate: Serve warm with toppings like syrup, fruit, or whipped cream. Add chocolate chips or berries for eyes or smiles if desired.

Notes

  • Use a squeeze bottle for better control when shaping the Mickey ears and face—it helps create cleaner outlines and keeps proportions consistent.
  • Non-stick griddle works best for evenly cooked pancakes and easy flipping, especially when forming fun shapes like Mickey heads.
  • Practice makes perfect: Don’t worry if the first few shapes aren’t perfect—kids will love them anyway, and you’ll improve with each batch!
  • Customize the batter by adding mini chocolate chips, mashed banana, or a pinch of cinnamon for extra flavor and fun.
  • Get creative with toppings: Use sliced strawberries for a bow (for Minnie), blueberries for eyes, or Nutella to draw smiles and outlines.
  • Make-ahead tip: The batter can be mixed and refrigerated for up to 24 hours. Stir gently before using.
  • Freezer-friendly: Cooked Mickey pancakes can be frozen between parchment sheets and reheated in a toaster or microwave for busy mornings.
  • Great for themed occasions: Ideal for Disney birthdays, holiday breakfasts, or just a magical Saturday morning.
